Making Ekwang from Cameroon

Ekwang also known as ekpang nkukwo is a traditional Nigerian and dish native to the Efiks and Ibibios. It is also widely enjoyed in Cameroon

Ingredients:

Cocoyam
Cocoleaves and bitterleaf
Palm oil
Ginger
Garlic
Maggi
Salt
Pepper
Country onion
Crayfish
Fish
Meat

 

Procedure:

Boil your meat and fish with some ginger, garlic, salt, and Maggi
Pill and grate your cocoyam
Cut and wash leaves to desired sizes
Mix the grated cocoyam with salt and Maggi to taste
Tie the grated cocoyam in the leaves and put in a pot Greese with palm oil
Put on the fire and use hot water from the fish and meat to cook
Add ginger, garlic, and pepper maggi n salt and let it cook for about 45 minutes
After 45 minutes add your palm oil, meat, fish, Crayfish and country onion and let it cook for another 30 minutes
